Manthoula (Eva) Apocourastos

Our beloved mother, grandmother and sister passed away peacefully in the early hours of January 28, surrounded by her close family and in comfort thanks to the staff of Unit 74 at the Rockyview Hospital.
Our mother was born in the village of Naoussa, in the island of Paros, in Greece, to Haralambous and Poulheria Daverona. Losing her mother at the age of nine, she managed to survive the famine and hardship of World War II with the support of her older siblings. She moved to Athens after the war where she eventually met her future husband Nicolas, a WWII veteran, and became the pillar of the family during the good times and the bad.
In 1973 they immigrated to Canada, and in spite of the different culture and language, she helped raise their children in a loving and caring environment. She did it all; she kept the house, she worked and supported her husband in his endevours until their retirement. She had a tremendous sense of humour, was a superb cook and a great host. Together with dad she loved to open her house to her friends for a celebration or party.
Mother was predeceased by several of her siblings first, and finally by our beloved father. Eventually time began to take its toll on her health, but she fought on with the same determination and perseverance that helped her face any other challenge. Finally, as her doctor noted, "she put up a good fight," but her time had finally arrived.
She is survived by her children, Manoli (Beata) and Maria; her grandchildren, Christina, George, and Denis; and her remaining siblings, Demetra and Anna, in Greece.
